Abstract: The paper presents a few theoretical aspects regarding the transformations which the forest fruits undergo along the technological process of conservation, by freezing. The forests fruits are rich in sugar, vitamins, mineral substances – the fresh ones having a high water content (85-95%), which may lead to favourable conditions to the development of the microorganisms responsible for their degradation. The cold conservation of the forest fruits is based on cryoanabiosis (congelation and storage in a frozen state).
