Abstract: | The paper presents a few theoretical aspects on the transformations undergone by forest fruits both while kept in a fresh state, immediately after harvesting, and throughout the technological process of conservation by dehydration. Forest fruits are rich in sugar, vitamins, mineral substances, and the fresh ones have a high water content (85-95%), which can lead to favourable conditions for the growth of the microorganisms responsible for their degradation. Drying (dehydration) is achieved by the evaporation of the water which gradually reaches the surface of the product to be dehydrated, the most common drying method being the one by convection at atmospheric pressure (hot air drying). |
