Abstract: The analysis of main methods for processing milk secondary raw materials is presented. Thermal and electrophysical parameters for various treatment regimes using the proposed method are described. The necessity to maintain thermal regimes at the recovery of protein and mineral concentrate and isomerisation of lactose into lactulose is substantiated. The ways to diminish the process temperature and energy consumption during the electrophysical whey treatment are proposed.
